About Us

Our History

In 1972 Eloy Roldan and Gianni Carrer acquired a then tiny marina bar and a harmonious and complimentary partnership was formed. It is often said that their relationship was stronger than that of two brothers.
In 1983 Gianni passed away suddenly and his wife Donna-Maria continued on in his place with the same passion and tenacity as her late husband.
Frederick Lightbourn started off as a teenager in the restaurant under the guidance of his aunt Donna, uncle Gianni and Eloy. After years of hard work he was asked to join the owners and currently manages our newest location at Sandyport.
Over the past 40 years their shared vision and dedication along with the support of family and friends have helped The Poop Deck blossom into one of the most iconic restaurants in The Bahamas.Located right on a beach, this location offers breathtaking ocean side views. It’s a great venue for weddings and special events too.
